Polyglutamic acid (gamma-PGA) is a water-soluble, biodegradable, edible and non-toxic biopolymer. It is a kind of poly-amino acid synthesized by microorganisms. It has excellent biocompatibility and biodegradability. It is degraded into glutamic acid in organism and absorbed directly. It can be used as biomedical material, sewage treatment engineering, food thickener, food antifreezing and freshness preservation, cosmetic moisturizer and other fields. Because of its strong hygroscopicity, the product can absorb more than 4000 times the weight of water. In water purification, heavy metals and radioactive metal ions can be removed; sewage treatment engineering can replace polyacrylamide and make breakthrough progress; pharmaceutical industry can be used as carrier of biocompatibility of pharmaceuticals; agricultural and sanitary equipment products can be used as superabsorbent, etc.

Natto is made by fermentation of soybean. It is rich in vitamins B2, B12, E, K2, gamma-PGA and many digestive enzymes. The main component of viscous colloid in natto is γ-PGA. Poly-gamma-glutamic acid (PGA)
It is a water-soluble poly-amino acid produced by microbial fermentation in nature. Its structure is a high molecular polymer with glutamic acid unit forming peptide bonds through alpha-amino and gamma-carboxyl groups.
Gamma-PGA is named NATTO GUM in the international cosmetics pharmacopoeia. It is also called plant collagen (Collagene vegetale) in the European Union and Japan. In China, it is called natto gum or polyglutamic acid or polyglutamate.
