Application Scope And Precautions Of Magnesium Ascorbate Phosphate(MAP)

Magnesium ascorbate phosphate is used as a loosening agent, starter and nutritional calcium supplement in food processing. Our country stipulates that it can be used for all kinds of food which need to be added with bulking agent, and it can be used as flour improver, and the amount used in flour is 0.03g/kg. It can also be used to make cement, ceramics, lime, calcium salt, toothpaste, dyes, pigments, mineral water, artificial stone, lime, neutralizer, catalyst, filler, medicine and so on.

Precautions for the use of magnesium ascorbate phosphate:

1. use attention. This product is more stable than ascorbic acid when heated at high temperature. If the product is treated at 200 C for 15 minutes, the retention rate is 90%, the biological effect is basically unchanged, while the ordinary vitamin C is completely inactivated, so it is suitable for nutritional fortification of high temperature processed food.

2. use as L- ascorbic acid.
